About a month ago, I was gifted a heaven sent tool that has single handedly changed my food prep!  I am not even being dramatic when I say that my Paderno Vegetable Slicer is the best kitchen item I have received in a long time. It slices, it dices, it make adorable spirals or ribbons of veggie goodness that I can disguise as noodles for a low carb treat for my kiddos. Yes it’s magic.

My particular gadget came with three blades and it fancifies (yes I just made up that word) all your kids least favorite foods, like zucchini and squash. The best part is how easy it is to use. You simply place the vegetable or fruit on the prongs, turn the wheel and push the base of the object into the blade. Like I said, ah-mazing!

I thought I would share our favorite spiralized recipe today and tell you to pick up Inspiralized which is a great cookbook for appetizers, main dishes and even side dishes that are party perfect!

Tzatziki Salad

  • 2 8 oz containers of plain yogurt (we use greek variety)
  • 2 cucumbers
  • 2 tb olive oil
  • 1/2 lemon juiced
  • salt and pepper to taste
  • 1 tb chopped fresh dill
  • 3 peeled cloves of garlic

Blend in a food processor, cover and refrigerate for one hour. Meanwhile, spiralize your zucchini noodles – you will use at least three zucchinis. Add cheery tomatoes, beet slices and cubed or balled fresh mozzarella. Add grilled chicken or shrimp (I use tofu since I don’t eat meat) and drizzle your chilled sauce on top. Yum!!!!
